• 10 oz fresh spinach – use baby spinach or chop large leaves
  • 1 qt strawberries, hulled and quartered
  • .5 cup pecans, chopped
  • .5 small red onion, very thinly sliced
  • .75 cup crumbled feta cheese (optional)


  • .25 cup balsamic vinegar – may substitute cider vinegar
  • .5 cup olive oil or other mild vegetable oil
  • 1.5 tbsp poppy seeds
  • 1.5 tbsp honey – add more to taste if using cider vinegar
  • .5 tsp Dijon mustard
  • .5 tsp salt
  1. Place sliced onions in a bowl of cold water for 30 minutes, while preparing the rest of the ingredients.
  2. Mix all dressing ingredients.
  3. Assemble all salad ingredients, including drained onions.
  4. Use half of the dressing to coat the salad.
  5.  Serve remaining dressing on the side.


Notes: Soaking the onions in water helps minimize the harsh flavor. Add dressing to the salad just before serving.
