Hello York City Family! How is everyone holding up at home, at work, in a season of life that can at times feel so uncertain & unwanted yet full of life and love? We invite you to take a breath and tune into what is growing in the soil of York City as we all continue to experience of the power of Mother Nature and her relentless free will.

As some of you may have experienced on your balcony, your rooftop, or in your backyard, the recent freezing temperatures caused our most warm-loving plants to take a hit. Primarily our hot peppers and field cucumbers fell victim, however a few of our tunnel tomatoes (pictured left) got burnt but the rest of the tunnel (pictured right) are healthy and will be stretching their arms soon enough! With this unexpected weather, not just the recent overnight cold but the past few weeks of patterns have put a damper on our crop growth.

With a lack of warmth and sunshine, our markets will unfortunately be delayed until June 12th, yet we surely welcome the sun’s visitation today and the days ahead, boosting plant health & happiness.

Today’s sunshine allowed us to begin re-planting those warm-loving crops, like cucumbers and peppers and we will be filling out the rest of our hot pepper beds through the weekend! 

RECIPE OF THE WEEK
Oven Roasted Asparagus

We have gratefully been harvesting delicious Spring Asparagus for the past few weeks and my is it tasty and good for your belly! Here is a simple recipe for roasting Asparagus for maximum nutrition to feed your body:

Ingredients:
1 bunch thin asparagus spears, trimmed
3 tablespoons olive oil 
1 ½ tablespoons grated Parmesan cheese (optional)
1 clove garlic, minced (optional)
1 teaspoon sea salt ½ teaspoon ground black pepper
1 tablespoon lemon juice (optional) 
– Preheat an oven to 425 degrees F (220 degrees C).Place the asparagus into a mixing bowl, and drizzle with the olive oil. Toss to coat the spears, then sprinkle with Parmesan cheese, garlic, salt, and pepper. Arrange the asparagus onto a baking sheet in a single layer.Bake in the preheated oven until just tender, 12 to 15 minutes depending on thickness.

Sprinkle with lemon juice just before serving. Enjoy!!

As mentioned, our Mobile Produce Market will launch on Friday, June 12th, with the Veggie Van full of Shaw Orchard strawberries & fresh greens from our fields – yums!

Speaking of the Veggie Van, we now have a second Fresh Vegetable Vehicle thanks to our great friends at Rabbittransit! It recently got the same coat of green paint by Jeremy Roach Auto Body and is currently in the shop at GraphikMasters to get jazzed up with decals. Knowing our second van is getting prepped for the upcoming market season leaves us with great excitement to soon be meeting our neighbors on the street with fresh, affordable produce grown organically in the City of York.
