• 4 medium carrots, sliced diagonally (or the equivalent amount of “baby” carrots)
  • 1 cup seedless red grapes, halved
  • 1.25 tbsp butter, melted
  • 1.25 tbsp honey
  • .25 tsp ground thyme
  • 1 tbsp chopped parsley
  • salt and pepper to taste
  1. Boil or steam carrots until just tender. Drain.
  2. Mix melted butter, honey, and thyme. Add to carrots and stir to coat.
  3. Season with salt and pepper. Sprinkle with parsley.

SERVES 4

Notes: Substituting orange marmalade for the honey makes a delicious version of these carrots.
